Crispy Smashed Potatoes



Ingredients 

  • 1.5 lbs Petite Yukon Gold or FIngerling Potatoes
  • 4 tablespoons Salted Butter melted
  • 3 tablespoons Extra-Virgin Olive Oil
  • 1/2 tablespoon Salt
  • 1 teaspoon Pepper

Instructions

  • Place potatoes in a large pot, cover with water, and bring to a boil. Cook for 20 minutes, or until fork-tender. Drain and let them rest for a few minutes.
  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Arrange potatoes on the baking sheet and use the bottom of a glass to flatten them.
  • Drizzle with olive oil and sprinkle with salt and pepper.
  • Bake for 30–40 minutes, or until crispy and golden.
